Mojito
This is an easy non-alcoholic version of the classic tropical drink. The unrefined cane sugar adds the rich flavor that usually comes from rum. It is still refreshing without the sweetener.
makes 2 servings
3 tbsp fresh lime juice 2 fresh mint sprigs 1 tsp unrefined cane sugar (such as Sucanat or Rapadura) 2 cups sparkling water ice - Divide the lime juice between two 8-ounce glasses.
- Put a sprig of mint in each glass.
- Add the unrefined cane sugar and mash with the handle end of a wooden spoon until the mint is quite bruised.
- Add ice and sparkling water to fill.
- Serve.
